If you mean the Eidos Logo at the beginning:In your FF8 folder, there's a file named 'publish.pak'. Just rename or delete it.

When i try to play this game without the publish.pak file the game crashes.

Actually you *CAN* disable the movies in FF8PC. Well, did you notice the twelve function keys on top of your keyboard?? Well, some of them serves a *SECRET SPECIAL* function in them, and one of them is to disable the movies (I forgot which key).But I'm sure F12 is to display the info like FPS, MIDI played etc.
