Well... probably not. You see, the XBox runs a modified NT kernel so the conversion is rather simple. There is nothing proprietary in an xbox:
theres:
An Intel 733 Mhz (basically) Celeron
A Geforce 3
64 MHz of Samsung DRAM
Thompson DVD Drive
10GB Seagate Hard drive

You see, the xbox is just a computer. Even the controller itself is just a USB hub

The playstation, on the other hand, runs on a RISC chip (similar to a MAC) with a different instruction set, so it would be incredibly difficult - if not impossible - not make playstation games run native to a PC.

Not at least without expanding it's internal RAM some.
There is a port of PCSX to it. So it's possible, one just has to be able to play mode 2 CD's in it and emulate the PSX sound system. The GPU  is the hard part as it needs to support the version of Direct X on the Xbox :)

Did I hear a rumour about FF7 being remade for PS2 a while ago? Sure, it wouldn't make any money from anyone bar the dedicated fans. I'd spend my notes for that.
 
Ive heard FF7 rumors a lot recently, remake for PS2, a video game sequel (not Advent Children) and whatever else, but dont believe anything until you see screenshots.

The remake is supposedply for the PSP, not the PS2

I have a funny feeling that Sony will do something stupid with PSP games like sitck "psp" after each title so... "Final Fantasy 7psp"

Well not exactly, but there's no secret magic way to port games -- you have to rewrite all platform-dependant code or, which is more common nowadays, work on different platforms in parallel.

Actually, the ports were done to update the codebase to something more portable. Square'a shareholders were really nagging on the board of directors to diversify ther products

The FF7 PC port was an attempt to diversify, remember that FF1 and FF2 were wonderswan games first.

FF1-6 were written in a very platfrom dependant version of assembly code. Square decided to update the games so that if a new system came out, they had the ability to port them without having to rewrite the games in the future.

So far it's worked, now they can make FF1-6 for the PSP and not have to worry about rewriting the games again.
